Rửa sạch hẹ, cắt khúc vừa ăn rồi cho vào chén riêng. Cho 3 quả trứng vào chén, đánh đều.
Làm nóng chảo rồi cho 10ml dầu ăn vào. Khi dầu nóng, đổ trứng gà đã đánh vào. Dùng sạn băm, đảo đều để trứng chín và được cắt thành những miếng vừa ăn.
Dùng chiếc chảo khác, cho vào 5ml dầu. Chờ dầu nóng thì cho hẹ vào đảo khoảng 1 phút. Khi thấy hẹ hơi chuyển màu và mềm cọng thì cho trứng chiên đã băm vào, xào đều tay. Nêm 2gr hạt nêm, 2gr muối, 1gr tiêu rồi đảo sạn đều để trứng xào hẹ được đều vị. Nếm thử xem trứng xào hẹ đã vừa ăn chưa và nêm thêm nếu cần. Đợi hẹ chín hẳn thì tắt bếp.
Cho trứng xào hẹ ra đĩa và thưởng thức thôi nào. Có thể xịt lên bề mặt ít tiêu để trứng xào hẹ thêm vị cay nồng. Vị thanh ngọt của hẹ và vị bùi béo của trứng đánh bổ trợ lẫn nhau, khiến bạn xuýt xoa ăn hoài không ngán.
