Canh cải khô cật heo (Bok choy) là một món canh quen thuộc trong bữa cơm thường ngày của người Hoa. Cải thìa được treo gió, nên rất giòn ngon. Cách làm lại vô cùng đơn giản.
Cật heo bổ đôi, bỏ màng trắng ở giữa, rửa sạch, cắt miếng vừa ăn. Pha vào nước sôi một ít rượu trắng, chần sơ qua cật heo để khử mùi hôi. Vớt cật ra, rửa và để ráo.
Rửa sạch cải khô. Ngâm cải từ 2 - 4 tiếng để cải mềm ra. Vớt cải ra, giữ lại phần nước ngâm để nấu canh. Cắt thành từng miếng vừa ăn.
Nếu dùng nấm đông cô khô thì ngâm nước khoảng 1 tiếng cho nấm mềm ra. Khi nấm đã mềm thì cắt bỏ cuống, ngâm trong nước muối loãng khoảng 15 phút. Sau đó xả sạch, để ráo.
Cho phần nước ngâm cải vào nồi nấu sôi. Thả cải vào nấu kĩ, nấu càng kĩ càng thơm ngon.
Cho nấm đông cô vào nấu khoảng 10 phút. Cho cật heo vào. Với cật heo, không cần nấu quá kĩ, sẽ bị dai. Nêm gia vị tuỳ khẩu vị. Mình thích cho cả nước tương, nếu bạn nào không thích thì có thể chỉ nêm hạt nêm là đủ. Múc canh ra chén và thưởng thức.
