Những hạt xôi dẻo thơm, mềm mà không nhão vị ngọt nhẹ với hạt sen bùi bùi. Chỉ cần ăn qua một lần chắc chắc món xôi lá dứa hạt sen sẽ lưu lại một ấn tượng sâu sắc trong lòng mỗi người.
Lá dứa đem rửa sạch sẽ rồi đem cắt khúc ngắn cho vào máy xay sinh tố, thêm 500ml nước và xay cho nhuyễn rồi lọc lấy nước lá dứa để ngâm gạo. Gạo nếp vo sạch để ráo nước rồi cho vào tô to, đổ nước lá dứa ngập gạo 1-2 đốt ngón tay và ngâm gạo qua đêm hoặc từ 6-8 tiếng. Hạt sen sau khi đã lấy hết tâm sen thì đem luộc chín rồi vớt ra.
Cho gạo nếp vào 1 cái tô to, thêm 30g dừa nạo sấy, 1/4 muỗng cà phê muối và hạt sen trộn đều lên. Cho nguyên liệu vừa trộn vào xửng và hấp cho tới khi xôi chín mềm, bạn có thể lấy vài hạt xôi thử xem xôi dẻo mềm là xôi chín. Khi xôi đã chín thì cho thêm 3 mỗng canh đường vào xới đều (nếu bạn dùng nước cốt dừa thì cho vào ở bước này rồi xới đều cho xôi ngấm đường và nước cốt dừa hòa quyện vào xôi), đậy vung và hấp thêm 2-3 phút là tắt bếp.
